Due to the massive consumption of natural resources and the environmental and social impact of its productive and logistics activities food industry plays a relevant role in the sustainability agenda. Studies and practitioners have noticed the need of understanding the approach to sustainability within supply chains, overcoming the idea of ‘corporate responsibility’ with ‘supply chain responsibility’. In fact, distinctive characteristics in each supply chain stage involve particular practices and performance objectives. Within the food industry the fruit and vegetables sector has a relevant role on Italian culture and economy, indeed volumes exported around the world are continuously increasing. Therefore, this research thesis has the objective to study drivers, practices and assessment method for sustainability in the fruit and vegetables supply chains in Italy, considering different stages in the chain: growers, processors, wholesalers and retailers. An additional objective is to analyze the relations of drivers to sustainability with practices and assessment methods adopted by companies in different stages of the chian. The research methodology in this study is characterized by an exploratory approach, based on multiple case studies. The research sample includes 12 companies that provided 25 units of analysis. Information was collected through interviews to managers of different areas (purchasing, sales, quality and sustainability managers) or directly with chairmans and directors. Data was analyzed with a structured approach starting considering single companies and then considering stages. Results suggest that each supply chain stage has a specific approach towards sustainability regarding the practices implemented. Regarding drivers to sustainability have been noted an high case specificity that almost override the differences between stages. Results also point out a good quantity of practices assessed along the supply chain and an higher relation of assessment method with sustainability areas than with supply chain stages. Additionally, it was observed that certain contingency variables affect companies behaviour on implementation and assessment of sustainability.
A cause dell’elevato consumo di risorse naturali e dell’impatto ambientale e sociale delle sue attività produttive e logistiche il settore agroalimentare riveste un importante ruolo per lo sviluppo sostenibile. Numerosi studiosi hanno evidenziato la necessità di studiare il tema della sostenibilità all’interno di diverse supply chain, sostituendo il concetto di “azienda sostenibile” con quello di “supply chain sostenibile”. Infatti, a seconda dello stadio ricoperto lungo la filiera produttiva, ogni azienda ha caratteristiche specifiche che impattano sull’implementazione di diverse pratiche di sostenibilità e sui conseguenti risultati. All’interno dell’industria agroalimentare il settore ortofrutticolo ricopre un ruolo rilevante per la cultura e l’economia Italiana, con una continua crescita dei volumi esportati. Per tali motivi questa ricerca ha come obiettivo lo studio dei driver, delle pratiche e dei sistemi di misurazione riguardanti la sostenibilità all’interno del settore ortofrutticolo italiano, tenendo in considerazione dei diversi attori della filiera: coltivatori, trasformatori, grossisti e distributori. Inoltre si vuole anche analizzare la relazione tra le motivazioni che spingono le aziende ad investire in sostenibilità con le pratiche messe in atto ed i sistemi di misurazione utilizzati nei diversi stadi della filiera. La metodologia di ricerca è caratterizzata da un approccio esplorativo basato sull’analisi di diversi casi aziendali. Il campione di analisi comprende 12 aziende che costituiscono 25 unità di analisi. le Informazioni sono state raccolte attraverso interviste a referenti aziendali appartenenti a diverse funzioni (acquisti, vendite, controllo qualità, sostenibilità e valori) ed a volte direttamente agli amministratori. I dati raccolti sono stati analizzati seguendo un approccio strutturato prima per singole aziende e poi per stadi. I risultati delle analisi mostrano come le aziende implementino pratiche diverse a seconda dello stadio della filiera a cui appartengono. Invece, per quanto riguarda le motivazioni che spingono lo sviluppo di queste pratiche, è stata riscontrata un’alta specificità all’interno delle singole aziende che va praticamente ad annullare ogni differenza tra gli stadi. Dall’analisi è anche emerso un buon livello di misurazione dei risultati derivanti dalle pratiche sviluppate, con un marcato legame tra pratiche sviluppate e il metodo di misurazione adottato. Infine è stato osservato come alcune variabili contingenti impattino sull’attitudine delle aziende a sviluppare e misurare i risultati delle proprie pratiche di sostenibilità.
