The total population of the earth is dramatically increasing and is consequently in need of sufficient resources. This is one of the many facts which can demonstrate the criticality of acting sustainably. Sustainability is broad subject and encompasses several different aspects and thus cannot be pinned down in to one unique statement and therefore, being applied in different fields and contexts provides reformed occasional definitions of this phenomenon. Having noticed the dramatic rise in global attention towards sustainability, this study is aimed at exploring the behavior of individuals regarding sustainable food consumption and for the sake of precision, has a focus on creating a proper research instruments for this field. The Theory of planned behavior is considered as the underlying infrastructure of this research. Worth mentioning, despite the significant practice of the Theory of Planned Behavior (TPB) in behavioral literature, the application of this model in the field of sustainable food is not sufficient. As an exploratory research, the main purpose of this thesis is to understand the behavior of sustainable food consumers. The research has been carried out by the means of the TPB as the framework. To be more specific, this study is trying to develop a questionnaire, as the research instrument, in a way to provide the most relevant information for the analysis. Thereafter, the survey is used in a test run in order to explore the possible compositions of the variables by applying an Exploratory Factor Analysis (EFA) and possibly, adjust the main TPB model by means of Structural Equation Model (SEM). The developed paper-based survey is used to collect a test sample from 120 master students in an international class in Politecnico di Milano university in Italy. The technique of Exploratory Factor Analysis (EFA) helps to identify the different possibilities of adjusting the main TPB framework. The adjustments applied on TPB are logically analyzed to see if they are aligned with the main idea behind each question and the whole model. In addition to the logical evidence of the adjustments, SEM and Confirmatory Factor Analysis (CFA) assisted to confirm the slight adjustments made to the model. To sum up, although the adjustments applied on the TPB framework are not extendable to the whole context due to the fact that the data was collected from a test sample, the current study demonstrates a scientific way of developing a data collection tool in order to result in the desired data and, consequently, analysis. According to the literature which was reviewed for this thesis, there are still many gaps to be filled both in the general implication of TPB to sustainability, in general, and in the field of development of the research instruments.
La popolazione sulla terra sta notevolmente aumentando e con essa accresce la necessità di risorse che siano sufficienti per tutti. Questo è uno dei fattori che dimostra l’urgenza di agire in modo sostenibile. La sostenibilità costituisce una materia molto vasta, comprensiva di molteplici aspetti e che, perciò, non può essere ridotta ad un’unica definizione; la sua applicazione in diversi campi e differenti contesti fornisce spiegazioni del fenomeno dissimili a seconda delle situazioni. Considerato il sensibile aumento dell’attenzione globale nei confronti della sostenibilità, il presente studio intende analizzare il comportamento degli individui in relazione all’utilizzo del cibo sostenibile e, in particolare, si concentra sulla creazione di uno strumento di ricerca appropriato. La struttura che sta alla base di questa ricerca è la Teoria del Comportamento Pianificato (TPB). È opportuno ricordare che, nonostante il notevole utilizzo di questa teoria nella letteratura comportamentale, l’applicazione di tale modello non è sufficiente nell’ambito del cibo sostenibile. In quanto ricerca esplorativa, lo scopo principale di questo elaborato è comprendere il comportamento dei consumatori di cibo sostenibile. La ricerca è stata condotta mediante l’utilizzo della TPB come struttura di riferimento. Più precisamente, questo studio tenta di costruire un questionario come strumento di ricerca al fine di raccogliere le informazioni più attinenti all’analisi. L’indagine effettuata è poi utilizzata per analizzare le possibili composizioni delle variabili mediante l’applicazione dell’Analisi Fattoriale Esplorativa (AFE) eventualmente adattando il modello TPB attraverso l’utilizzo del Modello di Equazione Strutturale (SEM). Il questionario cartaceo è stato somministrato ad un campione di 120 studenti internazionali del corso di laurea Magistrale del Politecnico di Milano. La tecnica dell’AFE aiuta ad identificare le diverse possibilità di adeguamento della struttura principale TPB. Gli aggiustamenti applicati al TPB sono stati logicamente analizzati per verificare la corrispondenza tra l’idea di fondo di ogni quesito e l’intero modello. Oltre alle prove logiche degli aggiustamenti, il SEM e l’Analisi Fattoriale Confermativa (AFC) hanno aiutato a confermare i piccoli adeguamenti che sono stati apportati al modello. In conclusione, nonostante gli aggiustamenti applicati alla struttura del TPB non siano estendibili all’intero contesto, in quanto i dati sono stati raccolti su un campione ristretto, il presente studio indica un modo scientifico per sviluppare uno strumento di raccolta dati al fine di condurre ai dati desiderati e, di conseguenza, all’analisi. Secondo la letteratura che è stata esaminata per il presente lavoro, restano ancora molti vuoti da riempire, sia per quanto riguarda le implicazioni generali della TPB nella sostenibilità sia lo sviluppo degli strumenti di ricerca.
