What is the f**d ? Mapping the food offerings and trends in Milan

What are the food offerings & trends in Milan? Where is the food world going? What are the trends emerged in Milan’s food industry due to the Expo 2015 today? After almost 6 month from the great closure of the fair, the influence of the Expo on the city can be analysed in details. Through the analysis of short time line, that represents the pre, during and post Expo period, in this thesis are interpreted various food trends newborn in Milan context. The case studies taken in consideration in this research were picked by defined criteria. They were analysed with help of various tools, like shadowing process, “one day in life” tool, five whys questionnaires and interviews. They were clustered according to their geographic position to facilitate their mapping on the Milan’s territory. The core of this research consists in the summary of features and characteristics of large amount of current food trends, collected in one huge table. This table contains various types of information (from the type of cuisine to the type of multifunctional service ) and permits the easy selection of case studies, according to the specific need and choice. Moreover it shows the gathered data about opening facilities (opening/closing hours) through the overlapped graphic, which correspond to characteristics of each case study and facilitates the collection of data. What is possible application of this work? The main idea of practical use of this data is to create an app, that would facilitate the search and selection.

Quali sono le offerte e tendenze alimentari a Milano?Dove sta andando il mondo del cibo? Quali sono ora le tendenze emerse nel settore alimentare di Milano dopo la causa dell’Expo 2015? Dopo quasi sei mesi dal grande chiusura della fiera, l’influenza dell’Expo sulla città può essere analizzato in dettaglio. Attraverso l’analisi dei criteri in screener’s dei casi stidio e della tabella, che rappresentano il pre, durante e post Expo period, in questa tesi sono interpretati varie tendenze alimentari innovativi nel contesto di Milano. I casi di studio presi in considerazione in questa ricerca sono stati selezionati in base a criteri definiti. Sono stati analizzati con l’aiuto di vari strumenti, come processo di shadowing, strumento di “un giorno nella vita”, cinque whys questionari e interviste. Essi sono stati raggruppati in base alla loro posizione geografica per facilitare la “mappatura” sul territorio di Milano. L’essenza di questa ricerca consiste nel riassunto delle caratteristiche e l’interpretazione analitica della grande quantità di tendenze alimentari attuali, raccolti in una tabella. Questa tabella contiene vari tipi di informazioni (dal tipo di cucina al tipo di servizio multifunzionale) e consente la semplice selezione di casi, secondo la necessità e la scelta specifica. Inoltre mostra i dati raccolti come: l’apertura, informazioni utili con la breve descrizione, con il logo, immagini dei interni e anche il cibo del caso attraverso le schede (screeners), che corrispondono alle caratteristiche di ciascun caso di studio e facilita la raccolta di loro dati.
