This thesis is centered in the study of sustainability in the food supply chain (FSC), given its growing interest for academics and practitioners because of the relationship with human safety and health, natural resources usage and economic development. The interest of the thesis is to study multiple stages in the food supply chain. The research objectives are: 1) to identify the practices related to sustainability that different FSC stages implement; 2) to investigate how the sustainability practices are associated to performances in the company and to the performances in the upstream or downstream; 3) to investigate the implications of different FSC stages in terms of sustainability practices implemented and related performances; and, 4) to investigate how sustainability assessment is carried out, if it is, in different FSC stages. This thesis comprises an introductory cover essay and the subsequent five studies. The work in the five papers intend first, to systematically review previous literature in the topic for identifying the relevant research gaps and delimit the objectives of the study (Paper 1). Second, to breakdown the problem into more observable pieces that could individually support the research objectives. Multiple cases were studied in Paper 2, Paper 3, Paper 4 and Paper 5 with the aim of observing the behavior towards sustainability of companies in multiple FSC stages. Findings in the studies highlight the interdependence existing in the FSC when pursuing sustainability thanks to the different strategies companies apply to deal with the uncertainties in the industry for reducing risk and manage the interdependencies too.
La tesi studia la sostenibilità della filiera alimentare (FSC) dato il suo crescente interesse per gli accademici e professionisti a causa della relazione con la sicurezza e la salute, l’utilizzo delle risorse naturale e lo sviluppo economico. L'interesse della tesi è quello di studiare vari stadi della filiera alimentare. Gli obiettivi della ricerca sono: 1) identificare le pratiche legate alla sostenibilità che i diversi stadi implementano; 2) studiare come le pratiche di sostenibilità sono associati alle performance in azienda e alle prestazioni a monte e a valle; 3) studiare le implicazioni dei diversi stadi in termini di pratiche di sostenibilità implementate e le relative performance; e, 4) studiare come la valutazione della sostenibilità viene effettuata, se lo è, in diverse stadi della FSC. Questa tesi comprende un capitolo introduttivo e cinque Paper. Il lavoro nei cinque Paper intende in primo luogo, di studiare sistematicamente la letteratura per individuare le gap di ricerca pertinenti e delimitare gli obiettivi dello studio (Paper 1). Secondo, alla ripartizione del problema in pezzi più osservabili che potrebbero sostenere singolarmente gli obiettivi della ricerca. Multipli casi di studio sono stati analizzati nei Paper 2, Paper 3, Paper 4 e Paper 5 con lo scopo di osservare il comportamento verso la sostenibilità delle aziende in più stadi della FSC. I risultati degli studi evidenziano l'interdipendenza esistente nella FSC quando ci sono oggettivi de sostenibilità e le diverse strategie applicate per affrontare le incertezze del settore, per ridurre il rischio e gestire le interdipendenze.
