This thesis work is based on two basic concepts that are nowadays in vogue in the industrial environment: Lean Thinking and Industry 4.0. An analysis of the existing literature on these two themes has been settled with a particular attention to the industries with a high customization component. Two little gaps were identified: the application, through a standardized method, of Lean Thinking in companies with a high degree of customization at the design phase and the implementation of typical technologies of Industry 4.0 for a further efficiency enhancement of the non-value activities directly related to client and the more strictly business activities. To analyze and to study these two questions a study case, with the characteristics of "fabricator" production with the "Engineering to Order" supply chain, was used: Cavanna Packaging Group S. p. A. A implementation method was applied and improved through the Lean application in the case study. In this way, it has been developed a standardized method for the study and implementation of Lean Thinking in this particular company typologies. As far as the second issue is concerned, a relation among the activity typology and each specific technology considered is created. Starting from the results obtained from the implementation of Lean in the case study, seven different application examples of Industry Internet of Things and Artificial Intelligence technologies have been developed. The evaluation of the economic and temporal benefits of each individual project showed very good results, with economic returns in a short period of time, despite the fact that the current economic incentives provided by the National fiscal plan "Industry 4.0" were not taken into account.
Il lavoro di tesi trova la sua origine in due concetti basilari e oggi particolarmente attuali nell'ambiente industriale: il Lean Thinking e l'Industria 4.0. Partendo dall'analisi della letteratura esistente su queste due tematiche, con particolare riferimento alle industrie con un'alta componente personalizzata, sono stati identificati due interessanti campi attualmente poco studiati e incompleti. Il primo riguarda l'applicazione del Lean Thinking, attraverso un metodo standardizzato, in aziende con un'elevata personalizzazione già a partire dalla fase progettuale. Il secondo prevede l'implementazione delle tecnologie tipiche dell'Industria 4.0 (Internet of things e Intelligenza artificiale) per un ulteriore efficientamento delle attività non a valore, direttamente legate al cliente, e le attività più strettamente di business. Per analizzare e studiare queste due domande è stato utilizzato un caso studio con le caratteristiche di "fabricator" con la filiera "Engineering to Order": Cavanna Group S.p.A. Attraverso l’applicazione nel caso studio del Lean Thinking è stato sviluppato e migliorato un metodo standardizzato per questa particolare tipologia di azienda. Per quanto riguarda il secondo ambito di studio si sono cercate le relazioni tra le differenti tipologie di attività - non a valore orientate al cliente e di business - e le due tecnologie prese in esame. A partire dai risultati ottenuti dell'implementazione del Lean nel caso studio, si sono sviluppati sette diversi esempi applicativi delle tecnologie Industry Internet of Things e Intelligenza Artificiale. Dalla valutazione dei benefici economico - temporali di ogni singolo progetto sono emersi ottimi risultati, con ritorni economici in tempi brevi, nonostante non siano stati considerati gli attuali incentivi economici previsti dal piano nazionale Industria 4.0.
