This Master thesis is the development from the research to the concept of a high-end, easily portable electrical Moka machine, which can make cappuccino. The company Dalla Corte suggested the topic and it was an interesting and promising idea for the further develop-ment. The purpose was to offer an updated and more advanced Moka pot to the market. The author attempts a better understanding of the Moka coffee-beverage through technical and professional specifics and the context of general market and movements, in order to support analysed development and to offer more relevant and concerned output of the con-cept. The research was conducted by reading through different resources, such as articles, blog-posts and reviews, publications, talking with professionals, baristas and people in different positions working in the coffee industry, and summarizing the results of a questionnaire among the target group, which is identified within the research. First part of the general research describes the target group, which is millennials, and their characteristic behaviour and expectations; and description of the movement intensity in macroscale. Second part is about the general movements and trends of the coffee industry, which can be considered as the summed system of those people values and expectations. The questionnaire is finding out the potential of the Moka machine (in more global sense than Italy), general coffee-consumption based attitudes and preferences, in more personal way. More specific research is about the Moka: history, current market and analysis of the most similarly functioning machines, and analyse of different compatible heating systems. The output concept is a Moka pot, with attachable induction heater and a milk pitcher. The Moka pot is designed compact for easier portability and comfortable stacking. The Moka pot is using a pressure built up in the base of the body, for milk-frothing.
La tesi tratta lo sviluppo di un concept di una caffettiera moka elettrica high-hand, facilmente portatile e adatta anche alla preparazione di cappuccino. L’azienda Dalla Corte ha suggerito il tema il quale è stato dallo studente accolto in quanto promettente ed interessante. L’obiettivo è quello di fornire al mercato una caffettiera moka avanzata e innovativa. L’autore affronta una comprensione più approfondita del caffè come bevanda dal punto di vista tecnico e professionale e analizza il contesto attuale, mercato, punti di vista e tendenze, così da procedere ad uno sviluppo analitico di un concept che sia rilevante e valido. La ricerca è stata condotta attraverso diversi canali, articoli, blog, recensioni, interviste a professionisti, baristi ed esperti nel mondo dell’industria del caffè e inoltre sono stati raccolti ed analizzati dati provenienti da questionari sottoposti a target specifici descritti nel documento. La prima parte della ricerca analizza il target, i millennials, le loro abitudini e le loro aspettative. Inoltre viene fornita una loro descrizione in scala più ampia e generale. La seconda parte invece riguarda i trend e le tendenze dell’industria del caffè come riassunto dei valori e delle aspettative del target considerato. Il questionario vuole far intendere le potenzialità della caffettiera Moka in scala globale, le abitudini e le preferenze degli utenti consumatori di caffè da un punto di vista più personale. Inoltre è presente una ricerca più approfondita sulla caffettiera Moka che riguarda la sua storia, quali sono stati i mercati raggiunti nella storia e quali quelli odierni. Il risultato è il concept di una caffettiera Moka con base riscaldante ad induzione e scalda latte integrati. Il design è compatto per facilitarne il trasporto e diminuire gli ingombri. La caffettiera utilizza il vapore prelevato dalla base della stessa per montare il latte per la preparazione di cappuccino.
