Factory logistics : analysis of activities in the agri-food industry and development of a model for the assessment of logistics costs

The agri-food industry plays a fundamental role within the Italian economic system. The Italian agri-food industry represents the first economic field in the country and the first "image" of Italy abroad. In fact, the Italian products are able to simultaneously grant high quality and tradition on the one hand and great competitiveness on global markets on the other hand. Nevertheless, its economic importance, the agri-food industry is based on actors who do not apply sophisticated managerial techniques. The majority of them act on the bases of their experience. The present thesis aimed to incentivize the quality of the agricultural products and reward the producers who better performed and who allowed to reduce the logistics costs. This is possible overcoming the lack of sophisticated performance measurement system within the agri-food supply chain, with particular attention to the cost estimation in the agri-food sector. Firstly, the literature review focused on the study of the Italian agri-food, with an understanding of the involved actors. Furthermore, the main methods for the performances measurement and the cost estimation were analyzed. Then, a single case study was developed within a consortium based in Emilia Romagna. The analysis of the single case study aimed at understanding the context and building an effective solution for the business. Four hypotheses raised from the field; in order to answer them, an analytical model was developed in order to allocate the costs sustained by the consortium for the conditioning of the different batches delivered by the producers/partners, by applying Activity Based Costing Methodology. Two different solutions of ABC have been implemented: the first one allocating activity cost on the bases of two quality products parameters; the second one adding also the lot size. Several benefits emerged: major visibility of costs; understanding of all the processes; estimation of each resource to realize different type of product. Although the two solutions were strictly related to the technological characteristics and the work organization within the plants, further research may be developed within different organizations to confirm the obtained results.

L'industria agroalimentare svolge un ruolo fondamentale all'interno del sistema economico italiano. Essa rappresenta il primo settore economico del Paese e la prima "immagine" dell'Italia all'estero. Infatti, i prodotti italiani sono in grado di garantire da un lato alta qualità e tradizione, dall'altro grande competitività sui mercati globali. Nonostante la sua importanza economica, l'industria agroalimentare è formata da attori che non applicano tecniche manageriali sofisticate. La maggior parte di loro, infatti, agisce in base alla propria esperienza. La presente tesi mira ad incentivare la qualità dei prodotti agroalimentari e premiare i produttori che lavorano bene e permettono di ridurre i costi logistici. Ciò è possibile superando la mancanza di sofisticati sistemi di misurazioni delle prestazioni all'interno della filiera agroalimentare, con particolare attenzione alla stima dei costi nel settore agroalimentare. In primo luogo, l’analisi della letteratura si è concentrata sullo studio del settore agroalimentare italiano, con focus sugli attori coinvolti. Inoltre, sono stati analizzati i principali metodi per la misurazione delle prestazioni e la stima dei costi. Pertanto, un singolo caso di studio è stato sviluppato all'interno di un consorzio con sede in Emilia Romagna. L’analisi ha lo scopo di comprendere il contesto e costruire una soluzione efficace per il business. Quattro ipotesi sono state sollevate dal campo; per rispondere, è stato sviluppato un modello analitico al fine di allocare i costi sostenuti dal consorzio per il condizionamento dei diversi lotti consegnati dai produttori/soci, applicando la metodologia dell’Activity Based Costing. Sono state implementate due diverse soluzioni di ABC: la prima che alloca il costo dell'attività sulla base di due parametri qualitativi del prodotto; la seconda considerando anche la dimensione del lotto. Sono emersi numerosi benefici: maggiore visibilità dei costi; comprensione di tutti i processi; stima del consumo di ogni risorsa per realizzare diversi tipi di prodotto. Sebbene le due soluzioni fossero strettamente correlate alle caratteristiche tecnologiche e all'organizzazione del lavoro all'interno dei magazzini, ulteriori ricerche potrebbero essere sviluppate all'interno di diverse organizzazioni per confermare i risultati ottenuti.
