Sustainable Design Orienting Concept for Distributed Food for Public Primary Schools in Izmir/ Turkey within Sustainable Product-Service System methodologies applied. Sustainable food systems in schools have become a key issue and worldwide, in terms of health, obesity, environmental and socio-ethical sustainability etc. The current situation in Turkey about agriculture and food system; even though it has favorable geographical conditions and climate, largely arable lands, abundant water supplies and a special place in the world about agriculture; the issue of sustainable food has not been given enough importance and no significant improvement has been achieved (Izmir Ticaret Borsası, 2014). At present, the studies in Turkey about sustainable food systems, although small, are growing and have great potential. However, most people and even organizations don’t have a knowledge about the benefits of sustainable food systems and its environmental and socio-ethical effects. The purpose of this thesis is to conduct an in-depth study on sustainability and sustainable food, comprehend the school food system in Turkey, find out the possibilities about sustainability for schools, interview with the school principles, teachers, students and parents, understand their working and supply system, explore the potential of possible stakeholders and design sustainable food service system for children at primary school in Urla, Izmir, resulting to be an effective tool to raise environmental awareness for children and families.
Concetto di orientamento sostenibile per alimenti distribuiti per scuole pubbliche pubbliche a Izmir / Turchia nell’ambito di metodologie di sistema di prodotto-servizio sostenibili. I sistemi alimentari sostenibili nelle scuole sono diventati una questione chiave e in tutto il mondo, in termini di salute, obesità, sostenibilità ambientale e socio-etica, ecc. La situazione attuale in Turchia in materia di agricoltura e sistema alimentare; anche se ha condizioni geografiche favorevoli e clima, terre largamente coltivabili, abbondanti riserve d’acqua e un posto speciale nel mondo per quanto riguarda l’agricoltura; la questione dell’alimentazione sostenibile non è stata data abbastanza importanza e non sono stati raggiunti miglioramenti significativi (Izmir Ticaret Borsası, 2014). Al momento, gli studi in Turchia sui sistemi alimentari sostenibili, anche se piccoli, stanno crescendo e hanno un grande potenziale. Tuttavia, la maggior parte delle persone e persino organizzazioni non hanno una conoscenza dei benefici dei sistemi alimentari sostenibili e dei suoi effetti ambientali e socio-etici. Lo scopo di questa tesi è di condurre uno studio approfondito sulla sostenibilità e il cibo sostenibile, comprendere il sistema alimentare scolastico in Turchia, scoprire le possibilità di sostenibilità per le scuole, intervistare i principi della scuola, insegnanti, studenti e genitori, capire i loro sistema di lavoro e di offerta, esplorare il potenziale delle possibili parti interessate e progettare un sistema di servizi di ristorazione sostenibile per i bambini nella scuola primaria di Urla, Izmir, risultando uno strumento efficace per sensibilizzare l’ambiente ai bambini e alle famiglie.
