Nowadays, the food industry is facing the challenge of ensuring product safety, dealing with the incessant increase of quality and sustainability expectations that are driving the customer needs. In this context, food traceability is the most suitable candidate to answer to these stimuli; inter alia, it has become the cornerstone of national and international legislation and the object of several technological innovations. Besides, scientific researches, academic articles, and technology development initiatives on this topic are influential, but still, there is not a complete overview of the themes surrounding traceability systems. To shed light on this literature gap, the study provides a framework for analyzing traceability systems and all the variables that affect the configuration of the traceability process. Subsequently, It has been deepened how technology innovation impacts the traceability process. The basis for the creation of the framework has been taken from the vast literature on the topic, both academic and non-academic; then the empirical consistency of the model has been tested through case studies examination. The variables affecting the traceability process have been identified, and the relationships among them have been studied, in order to provide companies with a strategic tool to approach the traceability systems implementation. It has been discussed that starting with the supply chain characteristics analysis and the establishment of the corporate traceability objectives, companies can understand how to develop a traceability process. Furthermore, the model gives the possibility to assess the potential impact of technological innovations on the traceability process, described through its dimensions of complexity and performance.
L'industria alimentare affronta oggi la sfida di garantire la sicurezza degli alimenti, scontrandosi con l'incessante aumento delle aspettative di qualità e sostenibilità dei clienti. In questo contesto, la tracciabilità alimentare è lo strumento più adatto per rispondere a questi stimoli ed è diventata un elemento fondamentale della legislazione nazionale e internazionale, oltre che oggetto di numerose innovazioni tecnologiche. Le ricerche scientifiche, gli articoli accademici e le iniziative di sviluppo tecnologico su questo argomento sono influenti, ma non esiste ancora una panoramica completa dei temi che caratterizzano i sistemi di tracciabilità. Per far luce su questo gap di letteratura, lo studio fornisce un modello per analizzare i sistemi di tracciabilità e tutte le variabili che influenzano la configurazione del processo di tracciabilità. Successivamente, è stato approfondito il modo in cui l'innovazione tecnologica influisce sul processo di tracciabilità. Si è attinto dalla vasta letteratura sull'argomento, sia accademica che non accademica, per erigere il fondamento del modello, e la consistenza empirica è stata testata attraverso lo studio di casi reali. Le relazioni tra le variabili che influenzano il processo di tracciabilità sono state identificate e studiate al fine di fornire alle aziende uno strumento strategico per affrontare l'implementazione dei sistemi di tracciabilità. È stato evidenziato come, partendo dall'analisi delle caratteristiche della filiera alimentare e dalla definizione degli obiettivi di tracciabilità, le aziende possono configurare al meglio il processo di tracciabilità. Il modello offre inoltre la possibilità di valutare l’impatto di potenziali innovazioni tecnologiche sul processo di tracciabilità, descritto attraverso le sue dimensioni di complessità e performance.
