Food and agriculture are vital sectors and activities that allow the life and the progress of humans. Multiple and profound trends are changing the setting in which companies are creating and delivering values, and in the years to come more and more challenges are to be faced. The growth of the population, resources scarcity, pollution and climate change are just some of the factors that people have to take into account. The food industry has the potential to face and help mankind in providing a solution to these great challenges. Innovation that sustains the quality of the product can grant a significant margin in order to improve life of people. This research aims at studying the impact of digital technologies on the food quality sector. In particular, a decision support model for the formation of commission for quality certification of Parmigiano Reggiano and the technologies to assess and control quality in the market of fresh fruit and vegetables were analyzed. In the first case it was found that the developed technology can help in forming commissions more efficiently and in a more rigorous way. The proposal of a linear programming based program and its advantages can also be interpreted as a first project in order to enhance the adoption of technological tools . In the second part it was highlighted that one of the critical success factor in the creation of an high quality product can be the effective communication and the coordination between steps in the production processes. Analyzing the criteria taken into consideration in order to assess the quality of apples and tomatoes and, how this criteria were implemented in digital systems and tools ,it was possible to evaluate the impact of technologies. Also in this case what was shown is that systems are aligned over the factor to be monitored in each step of the supply chain in order to reach a common objective.
Il settore agroalimentare è di vitale importanze per il progresso e il prosperare degli umani. Molti fattori importanti stanno cambiando le caratteristiche di creazione e distribuzione del valore. Nei prossimi anni si pensa che le sfide da affrontare saranno sempre maggiori. La crescita della popolazione, la scarsità di risorse, l'inquinamento e il cambiamento climatico sono soltanto alcuni dei problemi da tenere in considerazione. Il settore agroalimentare ha le potenzialità per aiutare l'uomo a trovare valide soluzioni a questi problemi. L'innovazione a sostegno della qualità potrebbe garantire margini di miglioramento per la vita delle persone. Questa ricerca si pone l'obiettivo di investigare l'impatto delle innovazioni digitali sul settore della qualità agroalimentare. In particolare si focalizzerà sulla creazione di un modello a supporto della certificazione di qualità del Parmigiano Reggiano e sulle tecnologie impiegate per il controllo di qualità del mercato ortofrutticolo. Nel primo caso si è affermato che la formazione delle commissioni di ispezione è più efficiente e rigorosa. La soluzione che ricalca un modello di programmazione lineare con i suoi vantaggi può essere letta come un progetto pilota utile all'adozioni di nuove tecnologie digitali. Nel secondo caso è stato sottolineato come la creazione di prodotti di qualità non possa prescindere da un'efficace comunicazione e coordinazione tra tutti gli step produttivi della supply chain ortofrutticola. Analizzando i criteri di qualità usati per la selezione di mele e pomodori e, come questi criteri vengano controllati da tecnologie digitali, è stato possibile valutare l'impatto di questi ultimi sistemi. Anche in questo caso l'allineamento dei fattori monitorati dai diversi attori ha dimostrato una sostanziale coordinazione volta al raggiungimento di un comune obiettivo.
