The developed project of this thesis, rises with the aim of recovering a former Eridania complex in San Bonifacio, province of Verona. The project area, abandoned since the mid-twentieth century, consists with three different building set along an horizontal axis: among these, the sugar factory arises al lover the scene. The study begins with a preliminary analysis of the surrounding area in order to understand its strenghts, weaknesses and needs, joint with a supportive study of local history and agricolture. From this phase, two principal requirements rise: the first need to generate spaces and environments dedicated to the community, able to expand the offer of recreational and cultural services of San Bonifacio, and the second need to create a reference center for both local and non-local wine productors. Through a deep study of the issues concerning the world of wine production in the Veneto region and its provinces, the design of a new possible model of research center, arises. With its different activities, the project takes the aim to help and collaborate with small and great winemakers along different phases of production: from the very beginning – the harvest – up to the finished, packaged and advertised wine product. From here, the need to deepen two aspects: first, the architectural and technical characteristics for the realization of a wine experimental cellar, through indications given by experts in the field, and second, the study of the most recent realities related to wine start-ups and wine marketing. Winenot is this: the challenge of setting up in a historic building – with its own shape and stylistic features – an innovative and technological environment that has, nowadays, more and more need of flexibility and suitable rooms to host functions in continuos and unstoppable mutation.
Il progetto sviluppato in questa tesi nasce dall’obiettivo di riqualificare un’ex complesso Eridania a San Bonifacio, provincia di Verona. L’area di progetto, abbandonata dalla metà del Novecento, è costituita da tre differenti edifici posti lungo un asse orizzontale: tra questi, si pone in maniera preponderante lo ‘Zuccherificio’. Lo studio inizia con l’analisi del territorio circostante per comprenderne le potenzialità, le carenze e le necessità ad esso legate, affiancandolo ad uno studio della storia e dell’agricoltura locale. Da questa fase emergono, poi, due esigenze parallele: la necessità di generare ambienti dedicati alla comunità ampliando, così, l’offerta di servizi ludico-culturali del Comune e quella di creare un centro di riferimento per i viticoltori locali e non. Attraverso un approfondimento delle problematiche riguardanti la produzione enologica nel Veneto e nelle sue province, prende forma la progettazione di un nuovo possibile modello di centro di ricerca contenente, al suo interno, diverse attività in grado volte all’aiuto e collaborazione con piccoli e grandi produttori nelle diverse fasi della produzione vinicola, a partire dalla vendemmia, fino ad arrivare al prodotto vino finito, confezionato e pubblicizzato. Da qui, l’esigenza di approfondire due aspetti: le caratteristiche architettoniche e tecniche per la realizzazione di una cantina sperimentale, attraverso la guida di esperti nel settore, e lo studio delle realtà più recenti in materia di start-up e marketing del vino. Winenot è, dunque, questo: insediare in un edificio storico, con una sua forma e cifra stilistica ben definita dalle esigenze del suo tempo, un ambiente tecnologico innovativo che ha, oggi, sempre più bisogno di spazi flessibili e adatti ad accogliere una funzione in continuo cambiamento.
