Sustainability practices in the processed meat supply chain : the case of Salumificio Fratelli Beretta

The objectives of the research are to identify the sustainability trends that characterize the processed meats industry and build a dashboard of indicators for the well-known company Salumificio Fratelli Beretta, through which the organization can start approaching and reporting its contributions and efforts to promote a sustainable development. The lack of a reporting initiative that takes into account, in a single framework, the specific sustainability aspects of food safety, animal welfare, food waste reduction, nutritional values and environmental impacts of meats, which characterize this sector, brought to the need to develop a dashboard of indicators for the above-mentioned company. For the investigation of the existing practices and potential actions linked to sustainability, it was possible to collaborate with some managers of selected functions within Fratelli Beretta and to interview them. The sustainability practices and actions performed by the company were mapped through the interviews and associated to one or more Sustainable Development Goals (SDG) and related Targets listed by the Agenda 2030 for Sustainable Development of the United Nations. The following step was the translation of these associations into indicators which include the environmental, social and economic dimensions that are the three pillars of sustainability. The dashboard built is made of 41 indicators which comprehend general disclosures, specific indicators of the processed meats industry and ad-hoc ones created for including all the relevant sustainable aspects detected in this sector. Furthermore, each indicator is linked with one or more SDG Targets, basing on its contribution to achieve the related goal. The sources behind the indicators are internationally known sustainability frameworks and initiatives which provide credibility, reliability and increase the quality of the output. The opportunity to interact with managers and discuss with them about the feasibility to retrieve the data and to compute each indicator, allowed to shift from a merely theoretical point of view of the issue to a more practical one which considers firm’s internal dynamics and barriers. It is important to underline that the methodology adopted can be extended to all the firms within the processed meats industry as well as the dashboard built since most of the indicators are related to the companies in this sector.

Gli obiettivi della ricerca sono identificare i trends della sostenibilità che caratterizzano l’industria delle carni lavorate e costruire un cruscotto di indicatori per la nota azienda Salumificio Fratelli Beretta, attraverso il quale l’organizzazione possa iniziare ad avvicinarsi e riportare i suoi contributi e sforzi per promuovere uno sviluppo sostenibile. La mancanza di un’iniziativa di rendicontazione che tenga conto, in un unico framework, degli specifici aspetti di sostenibilità riguardanti la sicurezza alimentare, il benessere animale, la riduzione dei rifiuti alimentari, i valori nutrizionali e gli impatti ambientali delle carni, che caratterizzano questo settore, ha portato al bisogno di sviluppare un cruscotto di indicatori per la sopra-citata azienda. Per lo studio delle pratiche esistenti e delle potenziali azioni collegate con la sostenibilità, è stato possibile collaborare con alcuni responsabili di selezionate funzioni all’interno di Fratelli Beretta ed intervistarli. Le azioni e le pratiche sostenibili presenti nell’azienda sono state mappate grazie alle interviste e associate ad uno o più Sustainable Development Goals e relativi Targets elencati nell’agenda 2030 per lo sviluppo sostenibile delle Nazioni Unite. Il passo successivo è stato la traduzione di queste associazioni in indicatori che includano le dimensioni ambientali, sociali ed economiche che sono i tre pilastri della sostenibilità. Il cruscotto costruito è composto da 41 indicatori che comprendono informazioni generali, indicatori specifici del settore delle carni lavorate e altri creati ad-hoc per includere tutti gli aspetti di sostenibilità individuati in questo settore. Inoltre, ogni indicatore è collegato ad uno o più SDG Targets, basandosi sul suo contributo per raggiungere il relativo obiettivo. Le fonti da cui questi indicatori sono ricavati sono framework ed iniziative nell’ambito della sostenibilità internazionalmente riconosciuti che forniscono credibilità, affidabilità e accrescono la qualità dell’elaborato. L’opportunità di interagire con i responsabili delle funzioni e discutere con loro della fattibilità di recuperare i dati e di calcolare ciascun indicatore, ha permesso di passare da un punto di vista solamente teorico dell’argomento ad uno più pratico che considera le dinamiche e le barriere interne all'azienda. È importante sottolineare che la metodologia adottata può essere estesa a tutte le imprese dell’industria delle carni lavorate così come il cruscotto costruito in quanto la maggior parte degli indicatori sono relativi a aziende operanti in questo settore.
