The problem of world hunger in parallel with the enormous daily waste of food is a far from sustainable contradiction. The trend of sustainability concern is increasing even in the humanitarian field and this thesis aims to provide an overview about it. The research is based on a literature review with a focus on Sustainability in Food Humanitarian Supply Chains. The methodology implemented consists in a Survey Research and Multiple Case Studies based on semi-structured interviews with humanitarian operators. The dissertation contributes to the existing literature by providing the humanitarian perspective on drivers and barriers to sustainability. As a result, a taxonomy of drivers and barriers to sustainability, and practices to manage them has been identified. Furthermore, the analysis of the case studies identified several key practices for managing barriers to sustainability and analyzed the main differences between a humanitarian food distribution chain and a traditional one. The research sample includes 7 companies operating in different countries. Interviews were performed to gather data from humanitarian operators. Findings will help humanitarian organizations in gaining knowledge on the topic and of different practices successfully implemented by others. Finally, limitations and further research opportunities are discussed.
Il problema della fame nel mondo in parallelo con l'enorme spreco quotidiano di cibo sono una contraddizione tutt'altro che sostenibile. La tendenza a preoccuparsi della sostenibilità sta aumentando anche nel campo umanitario e questa tesi mira a fornire una panoramica su di essa. La ricerca si basa su una revisione della letteratura con un focus sulla sostenibilità nelle catene umanitarie di approvvigionamento alimentare. La metodologia implementata consiste in una ricerca tramite questionario, e lo svolgimento di diversi casi di studio basati su interviste semi-strutturate con operatori umanitari. La tesi contribuisce alla letteratura esistente fornendo la prospettiva umanitaria sui driver e le barriere alla sostenibilità. Come risultato, è stata identificata una tassonomia di driver e barriere alla sostenibilità, e le pratiche per gestirli. L'analisi dei casi di studio è servita a identificare diverse pratiche chiave per la gestione di barriere alla sostenibilità, e a identificare le principali differenze tra una catena umanitaria di distribuzione cibo, e una tradizionale. Il campione di ricerca comprende 7 organizzazioni che operano in diversi Paesi. Sono state effettuate interviste per collezionare dati dagli operatori umanitari. I risultati aiuteranno le organizzazioni umanitarie ad acquisire conoscenze sull'argomento e sulle diverse pratiche attuate con successo da altri. Infine, sono stati discussi i limiti e le possibili ricerche future.
