The present research aims to analyze the situation of Food Loss and Waste (FLW) in the HORECA sector in the city of Celaya, Mexico, and the actions that have been taken to reach Sustainable Development Goal 12.3. The methodology followed was first, research of FLW measurements, practices, and the current situation of the FLW management of the city. Then a survey was done to important players of the sector, and, in the end, a Case Study was applied to implement measurements, methods, and actions in a HORECA (Hotel, Restaurants and Cafes) business in the city. The lack of measurement and methodology to have a follow up of FLW that it is being generated, the lack of implementation of actions to reduce FLW, and the missing procedures to treat FLW as required to pollute as little as possible, gave this research the opportunity to suggest to the Municipal Government certain actions, tools, and methods to intervene on the FLW reduction topic.
La presente ricerca mira ad analizzare la situazione delle perdite e degli sprechi alimentari (FLW) nel settore HORECA (Hotel, Ristoranti e Caffè) nella città di Celaya (Messico) e le azioni che sono state intraprese per raggiungere l'Obiettivo di Sviluppo Sostenibile 12.3. La metodologia seguita si è basata sulla ricerca delle misurazioni in base alla situazione attuale degli sprechi della città. Successivamente, è stata effettuata un'indagine presso importanti punti del settore ed infine, è stato applicato un Case Study per implementare misure, metodi e azioni in un ristorante situato nella città. La mancanza di misurazioni e di metodologie in grado di effettuare il monitoraggio del FLW generato, l’insufficienza di azioni e procedure mirate a ridurne la quantità e la corretta gestione dei rifiuti, ha dato al ricercatore l'opportunità di suggerire all'Amministrazione Comunale alcune azioni e metodologie per affrontare con successo il delicato tema della riduzione del FLW.
