Thinking of Bilbao, the many masterpieces of the city come to mind: Ghery's Guggenheim, Foster's metro stations, Pelli's tower, Moneo's library and many others. Since the beginning of the Nineties, in order to redevelop the city after the decline of its industrial power and the disastrous flooding of the river Nevrión that runs through it, many revitalisation plans have been implemented, making the cisty a showcase for iconographic interventions. At the same time, the Basque Country has always been a place of strong identity culture, which manifests itself in various aspects. Gastronomy is one of the pillars of the Basque identity and is supported by numerous factors: several starred restaurants, various gastronomic associations, and schools, las sociedades gastronomicas, the traditional pintxos walk, and the cider houses. This duality, the architectural innovation and the strong gastronomic identity, finds a synthesis in the presence of gastronomic functions inside the aforementioned iconographic buildings of the transformation, such as the starred restaurant Nerua inside the Guggenheim, La Taska de Isozaki, a bar named after the designer himself or the restaurant in the historic Ceres factory, converted into a residential building. This analysis was key to find the design concept for the Grandes Molinos Vascos, a flour factory that started operating in 1924 and was closed down in 1929. The building, despite of being protected by the Cultural Heritage since 2009, today is still abandoned today. The aim of the project is to give new life to this building as a memento of the industrial history, taking into account the culture and strong gastronomic vocation of Bilbao; its vocation and identity that will be combined through the creation of a gastronomic centre, which recalls both the historical production, re-proposed by the vertical farm, and the consumption through the restaurant and the market, as well as the educational aspect, with the cooking school.
Nominando Bilbao si pensa alla quantità di interventi d’autore che la costituiscono: il Guggenheim di Ghery, le stazioni metropolitane di Foster, la torre di Pelli, la biblioteca di Moneo e molti altri. Infatti, dall’inizio degli anni Novanta, per riqualificare la città dopo il declino della sua realtà industriale e la disastrosa esondazione del fiume Nevrión che la attraversa, sono stati attuati piani di rivitalizzazione che l’hanno portata al centro dell’interesse mondiale, facendola diventare, tra le altre cose, vetrina di interventi iconografici. Allo stesso tempo i Paesi Baschi sono da sempre luogo di forte cultura identitaria, che si manifesta in diversi aspetti. La gastronomia, in particolare, è uno dei pilastri dell’identità basca, ed è supportata da numerosi fattori: la presenza di diversi ristoranti stellati, varie associazioni e scuole gastronomiche, le sociedades gastronomicas, la tradizionale passeggiata dei pintxos, le sidrerie. Questa dualità, ovvero l’innovazione architettonica e la forte identità gastronomica già trovano una sintesi nella presenza di funzioni gastronomiche all’interno dei citati edifici iconografici chiave della trasformazione, come il ristorante stellato Nerua all’interno del Guggenheim, La Taska de Isozaki, locale che prende il nome dal progettista stesso o il ristorante nella storica fabbrica Ceres, riconvertita in edificio residenziale. Questa lettura è stata chiave per la proposta di riqualificazione dell’edificio dei Grandes Molinos Vascos, fabbrica di farina entrata in attività nel 1924 e dimessa già nel 1929. L’edificio, nonostante la tutela dal Patrimonio dei beni culturali dal 2009, oggi è ancora abbandonato. L’obiettivo dell’intervento è infatti quello di proporre una riconfigurazione di questa architettura memoria del passato industriale, tenendo conto della cultura e della forte vocazione gastronomica identitaria di Bilbao; vocazione e identità che saranno coniugate attraverso la creazione di un centro gastronomico, che richiama sia lo storico aspetto produttivo, riproposto dalla vertical farm, sia quello di consumo attraverso il ristorante e il mercato, passando per quello educativo, con la scuola di cucina.
