This master thesis report is based on sector-based research with an analysis of the food industry. The objective of this paper was to analyze the constraints and motivations for sustainable development in the food sector. Since concerns about sustainability matters have been growing significantly during the last decades, the triple bottom line approach has gained attention in companies, especially with regard to sustainable products. This research aims to investigate if and how the introduction of a strategic project and an IT system such as PLM can help businesses improve and satisfy all the stakeholders they interface with. For this purpose, the research carried out was divided into two interconnected sections. The first part is a specific study on sustainability and its role in the food & beverage industry. The second one is a detailed analysis of PLM in all its facets within the industry. The analysis based on research websites such as Scopus, Web of Science, and Google Scholar showed that no research had been conducted so far towards the investigation of the relationship between PLM and Sustainability within the analyzed market. For this reason, the thesis tries to highlight this relationship and what benefits PLM can generate. In the first stages of this paper, the concern is about the specific definition of the term sustainability and how it is conceived within the food industry. Further, the study structure of the main sustainable practices that food production companies have to follow classifies the functionalities of PLM and defines an adequate and effective method for implementing these functionalities to make sure they reach a beneficial impact on sustainable practices. Finally, thanks to the frameworks examined, the research defines a direct relationship between PLM and Sustainability and how the advantages of the software can improve company standards of environmental impact, CSR, and economic sustainability. This thesis gives researchers an excellent starting point for developing and validating studies concerning PLM and its application in the food industry. It is also a great beginning to define the relationship between PLM and sustainability in other sectors in which it is applied. Finally, this research can help companies in the food and beverage market to have a clearer idea of this software, its specific features, how it can be implemented correctly, and what advantages they can benefit from it.
Questa tesi di laurea è una ricerca settoriale focalizzata sull'industria alimentare. L'obiettivo di questo documento era quello di analizzare i vincoli e le motivazioni per lo sviluppo sostenibile nel settore alimentare. Poiché negli ultimi decenni le preoccupazioni per le questioni di sostenibilità sono cresciute in modo significativo, l'approccio a tripla linea di fondo ha guadagnato attenzione nelle aziende, in particolare per quanto riguarda i prodotti sostenibili. Questa ricerca si propone di indagare se e come l'introduzione di un progetto strategico e di un sistema informatico come il PLM possa aiutare le aziende a migliorare e soddisfare tutti gli stakeholder con cui si interfacciano. A tal fine, la ricerca svolta è stata divisa in due sezioni interconnesse. La prima parte è uno studio specifico sulla sostenibilità e il suo ruolo nel settore alimentare & bevanda. La seconda, è un'analisi dettagliata del PLM in tutte le sue sfaccettature all'interno del settore. L'analisi basata su siti di ricerca come Scopus, Web of Science e Google Scholar ha mostrato che finora non era stata condotta alcuna ricerca verso l'indagine del rapporto tra PLM e Sostenibilità all'interno del mercato analizzato. Per questo motivo, la tesi cerca di evidenziare questa relazione e quali benefici PLM può generare. Nelle prime fasi di questo documento la preoccupazione per la definizione specifica del termine sostenibilità e come è concepito all'interno dell'industria alimentare. Inoltre, la struttura di studio principali pratiche sostenibili che le aziende di produzione alimentare devono seguire, classifica le funzionalità che PLM, definisce un metodo adeguato ed efficace per implementare queste funzionalità per assicurarsi che raggiungano un impatto benefico sulle pratiche sostenibili. Infine, grazie ai framework esaminati, la ricerca definisce un rapporto diretto tra PLM e Sostenibilità e come i vantaggi del software possano migliorare gli standard aziendali di impatto ambientale, CSR e sostenibilità economica. Questa tesi offre ai ricercatori un ottimo punto di partenza per lo sviluppo e la convalida di studi riguardanti il PLM e la sua applicazione nell'industria alimentare. È anche un ottimo inizio per definire il rapporto tra PLM e sostenibilità in altri settori in cui viene applicato. Infine, questa ricerca può aiutare le aziende del mercato alimentare e delle bevande ad avere un'idea più chiara di questo software, delle sue caratteristiche specifiche, di come può essere implementato correttamente e di quali vantaggi possono trarne beneficio.
