SaFe. Slow atelier food ecosustainable

S.a.F.e. is not just a project: it is a gesture, a philosophy that stems from the desire to transform a small shop of local distribution in the province of Bergamo, the "Cooperativa la Coccinella", into something new and different. S.a.F.e. means safe and healthy, in relation to the offer of the store, but it also stands for "Slow Atelier Food ecosustainable." In fact it’s projected as a place "active", an “atelier", and "ecosustainable", because environmentally friendly, which focuses on "Slow Food", with the aim of finding the values of tradition. So it can be summed up in two key concepts: Multifunctional space and 100% ecosustainable. S.a.F.e. is multifunctional because it sells local products on tap, proposing an environmentally conscious system for buying. It’s light and essential, offering organic, tested, and sustainable products. It promotes short chain and thus products km0, valuing the land and working with local most virtuous producers. It tracks products with an "identity card", a label with all the necessary informations about them. It promotes a conscious purchase: to reduce waste, it buys products in batches and / or drums and it sells them bulk, with biodegradable, reusable and recyclable containers. It proposes a system based on "more substance and less waste": the recovery of products "ugly but good" that are donated to charities in the province is one example. It offers some services including an area for herbal teas, a children's play area and a sitting area for reading. Finally it organizes events: offering the chance to meet the producers and the experts in the field or to watch movies in the sector, with the aim of creating a network of relationships that could spread the information. S.a.F.e. is also 100% ecosustainable : for the materials chosen, the offer (of products and services), the packaging, the distribution, the use, the relationship with the customer and the end of life of products, (materials used with reuse and recycling). S.a.F.e. represents a possible future for the "Little Shop".

S.a.F.e. non è solo un progetto: è un gesto, una filosofia che nasce dalla volontà di trasformare un negozio della piccola distribuzione locale nella provincia di Bergamo, la “Cooperativa la Coccinella” in qualcosa di nuovo e di diverso. S.a.F.e. significa sicuro e sano, riferito all’offerta del negozio, ma è anche acronimo di “Slow atelier Food ecosustainable”. E’ pensato infatti come un luogo “attivo”, un “atelier”, ma “ecosustainable”, in quanto rispettoso dell’ambiente, che si occupa principalmente di “Slow Food”, con l’obbiettivo di ritrovare i valori della tradizione. Può quindi essere riassunto in due concetti chiave: SPAZIO POLIFUNZIONALE ed ECOSOSTENIBILE AL 100%. S.a.F.e. è polifunzionale poiché vende prodotti del territorio alla spina, proponendo un sistema di acquisto consapevole e compatibile con l’ambiente. E’ leggero ed essenziale, offrendo prodotti biologici, controllati, e sostenibili. Promuove la filiera corta e quindi i prodotti a km0, valorizzando il territorio e collaborando con i produttori locali più virtuosi. Traccia i prodotti con una “carta d’identità”, un etichetta con tutte le informazioni necessarie. Favorisce l’acquisto consapevole. Infatti per ridurre gli sprechi, acquista i prodotti in lotti e/o fusti e li rivende sfusi, in contenitori biodegradabili, riutilizzabili e riciclabili. Propone un sistema basato su “più sostanza e meno scarto”: il recupero dei prodotti “brutti ma buoni” che vengono donati ad associazioni di volontariato della provincia ne è un esempio. Offre alcuni servizi tra cui la tisaneria, un area gioco per bambini e un area relax per la lettura. Infine organizza anche eventi: offrendo la possibilità di conoscere i produttori, di incontrare esperti del settore o di vedere film di settore con l’obbiettivo di creare una rete di relazioni tesa a diffondere l’informazione. S.a.F.e. è ecostenibile al 100% per quanto riguarda i materiali scelti; l’offerta, oltre che di prodotti anche di servizi; il packaging; la distribuzione; l’uso, stabilendo un rapporto con il cliente e il fine vita dei prodotti e dei materiali usati, con il riuso e il riciclo. S.a.F.e. rappresenta un possibile futuro per la “piccola bottega”.
