The increasing need for more sustainable processes combined with the boost of digital technologies development is transforming the agricultural supply chain. Every actor in the end-to-end process is adopting digital-based techniques to enhance the transition pathways toward social, economic, and environmental sustainability. Start-ups and entrepreneurs constitute essential gear for agricultural renovation due to their innovative capacity and flexibility to incorporate disruptive technologies. Thus, this thesis realized a study of the available literature to shed light on the sustainable impact generated by high-tech start-ups and their approach employed to link 4.0 technologies with the agricultural supply chain. The assessment of the current state of the art revealed a lack of analysis of the technologies implemented and the mechanism developed by high-tech start-ups to deliver sustainability across the agri-food supply chain. This thesis aims to fill this gap by studying a substantial number of high-tech start-ups to gain insights into which technology, supply chain tier, and mechanism of participation are most preferred and the specific sustainability benefits derivate from each configuration. Our results indicated that data analytics technologies are the most widespread among the seven categories found in the agri-food supply chain and farmers are the most addressed tier. Furthermore, it revealed that start-ups enable 4.0 technologies implementation by developing and providing tailored technological solutions to the traditional actors in the agricultural processes. Therefore, facilitating the enhancement of a digital-based supply chain and enabling sustainable solutions adapted to everyone's requirements.
La crescente necessità di processi più sostenibili unita alla spinta dello sviluppo delle tecnologie digitali sta trasformando la filiera agricola. Ogni attore da inicio a fine del processo sta adottando tecniche basate sul digitale per migliorare i percorsi di transizione verso la sostenibilità sociale, economica e ambientale. Le start-up e gli imprenditori costituiscono strumenti essenziali per il rinnovamento agricolo grazie alla loro capacità innovativa e flessibilità nell'incorporare tecnologie dirompenti. Pertanto, questa tesi ha realizzato uno studio della letteratura disponibile per far luce sull'impatto sostenibile generato dalle start-up high-tech e sul loro approccio utilizzato per collegare le tecnologie 4.0 con la filiera agricola. La valutazione dell'attuale stato dell'arte ha rivelato una mancanza di analisi delle tecnologie implementate e del meccanismo sviluppato dalle start-up high-tech per garantire la sostenibilità lungo la filiera agroalimentare. Questa tesi mira a colmare questa lacuna studiando un numero considerevole di start-up high-tech per ottenere informazioni su quale tecnologia, livello della catena di fornitura e meccanismo di partecipazione sono maggiormente preferiti e gli specifici benefici di sostenibilità derivati da ciascuna configurazione. I nostri risultati hanno indicato che le tecnologie di analisi dei dati sono le più diffuse tra le sette categorie presenti nella filiera agroalimentare e gli agricoltori sono il livello più indirizzato. Inoltre, ha rivelato che le start-up consentono l'implementazione delle tecnologie 4.0 sviluppando e fornendo soluzioni tecnologiche su misura agli attori tradizionali nei processi agricoli. Pertanto, facilitando il miglioramento di una catena di fornitura basata sul digitale e consentendo soluzioni sostenibili adatte alle esigenze di tutti.
