To provide a healthy life style to the consumers and to create awareness towards sustainable way of consuming food by selling food products in bulk i.e., without packaging wrapped around food, bulk shops have come a long way in helping the environment by cutting out the plastic usage. Since the beginning of this decade, more bulk food stores open in Italy’s cities to provide an alternative to conventional, packaged products. The opportunity these novel stores offer in moving to an alternative, more sustainable grocery retail system are currently not well understood. On the other hand, big retailers are showing less interest to start selling food products in bulk. To understand and have a wider opinion on both bulk shops and big retailers, Semi-structured interviews with informants of nine bulk shops across Italy and two food supply chain experts from big retail industries were conducted in order to address the gap. The Interviews aim to provide information regarding benefits and challenges of a bulk shop through selling food products without packaging, additionally to get the information on why big retails hesitate to sell food products in bulk. Findings suggest that, these bulk shops aim to contribute their part to the world by reducing the use of plastic packaging and to promote sustainable way of living by selling organic, bio food products which are locally grown by local farmers. Benefits of these bulk shops are: customers can buy in the quantity they want to, to support local farmers and local food suppliers, to provide alternative food options to consumers, and most importantly following sustainable practices in every step of their business. Challenges include: High price of the products as the food is been grown locally, consumer behaviour since consumers are not used to shopping in bulk, sanitisation, and maintenance of the store. Finally, from the expert interviews of big retailers it was found that it is difficult to find suppliers who sell huge volume of products in bulk without packaging, their current suppliers are not ready to sell in bulk as consequences will be occurred in supply chain configuration. In future by taking necessary precautions and with more development in the technology of bulk food department big retailers are willing to start selling in bulk. Furthermore, possible solutions based on the challenges faced by the bulk shops solutions were proposed to help the bulk shops.
Per fornire uno stile di vita sano ai consumatori e creare consapevolezza verso un modo sostenibile di consumare cibo vendendo prodotti alimentari sfusi, cioè senza imballaggi avvolti attorno al cibo, i negozi sfusi hanno fatto molta strada per aiutare l'ambiente tagliando l'uso di plastica . Dall'inizio di questo decennio, nelle città italiane vengono aperti più negozi di alimenti sfusi per fornire un'alternativa ai tradizionali prodotti confezionati. L'opportunità offerta da questi nuovi negozi di passare a un sistema di vendita al dettaglio di generi alimentari alternativo e più sostenibile non è attualmente ben compresa. Al contrario, i grandi rivenditori stanno mostrando meno interesse a iniziare a vendere prodotti alimentari sfusi. Per comprendere e avere un'opinione più ampia sia sui negozi all'ingrosso che sulla grande distribuzione, sono state condotte interviste semi-strutturate con informatori di nove negozi all'ingrosso in tutta Italia e due esperti di filiera alimentare della grande distribuzione al fine di colmare il divario. Le interviste mirano a fornire informazioni sui vantaggi e le sfide di un negozio all'ingrosso attraverso la vendita di prodotti alimentari senza imballaggio, oltre a ottenere informazioni sul motivo per cui le grandi catene di vendita al dettaglio esitano a vendere prodotti alimentari all'ingrosso. I risultati suggeriscono che questi negozi all'ingrosso mirano a contribuire al mondo riducendo l'uso di imballaggi in plastica e a promuovere uno stile di vita sostenibile vendendo prodotti alimentari biologici coltivati localmente da agricoltori locali. I vantaggi di questi negozi all'ingrosso sono: i clienti possono acquistare nella quantità che desiderano, sostenere gli agricoltori locali e i fornitori di alimenti locali, fornire opzioni alimentari alternative ai consumatori e, soprattutto, seguire pratiche sostenibili in ogni fase della loro attività. Le sfide includono: prezzo elevato dei prodotti poiché il cibo viene coltivato localmente, comportamento dei consumatori poiché i consumatori non sono abituati a fare acquisti all'ingrosso, sanificazione e manutenzione del negozio. Infine, dalle interviste agli esperti dei grandi rivenditori è emerso che è difficile trovare fornitori che vendano enormi volumi di prodotti sfusi senza imballaggio, i loro attuali fornitori non sono pronti a vendere all'ingrosso poiché si verificheranno conseguenze nella configurazione della catena di approvvigionamento. In futuro, prendendo le precauzioni necessarie e con un maggiore sviluppo della tecnologia del reparto alimenti sfusi, i grandi rivenditori sono disposti a iniziare a vendere all'ingrosso.
