The following exploratory study aims at investigating the supply chain adaptations deployed by companies in the food retail sector during the Covid-19 crisis, from the point of view of supply chain innovation. Following an extensive literature review, innovation opportunities with regard to operational supply chain innovations, supply chain concept innovations, and technological supply chain innovations were searched among six Italian companies operating in food retail supply chains by means of semi-structured interviews with supply chain managers. Qualitative coding of interviews allowed several supply chain innovations to emerge from the considered sample, which have been grouped in three inductively identified categories associated with the above-mentioned supply chain typologies. The results highlighted how companies mainly adopted operational supply chain innovations followed by supply chain concept innovations. While, except for one case, no technological supply chain innovations were adopted as a reactive way for Covid-19. Still, Covid-19 crisis boosted the adoption of many future technological innovations in those supply chains, mainly related to the reduction of dependency from labor force through automation. Moreover, the presented study contributes into drawing a parallel with the previous existing literature related to supply chain resilience in food retail supply chains during Covid-19.
La seguente ricerca esplorativa mira a indagare i cambiamenti a livello di supply chain adottati dalle aziende del food retail durante la crisi del Covid-19, dal punto di vista della “Supply Chain Innovation”. A seguito di una estesa Literature Review, opportunità di innovazione relativamente a “operational supply chain innovations”, “supply chain concept innovations” and “technological supply chain innovations” sono state ricercate in sei aziende italiane che operano in food retail supply chains attraverso interviste semi-strutturate con supply chain managers. Il coding delle interviste ha permesso a diverse supply chain innovations di emergere dal campione considerato, venendo poi raggruppate in tre categorie definite induttivamente e associate alle tipologie di supply chain innovations sopra menzionate. I risultati hanno evidenziato come le aziende hanno principalmente adottato “operational supply chain innovations” seguite da “supply chain concept innovations”. Mentre, fatta eccezione per un caso, “technological supply chain innovations” non sono state adottate in modo reattivo al Covid-19. Ciononostante, si può dire il Covid-19 abbia accelerato l’adozione di diverse “technological supply chain innovations” nel futuro, soprattutto legate ad una maggiore independenza dalla forza lavoro umana attraverso l’automazione. Inoltre, la ricerca presentata contribuisce a tracciare un parallelo con la precedente letteratura relativa alla supply chain resilience in food retail supply chains durante il Covid-19.
