Food waste is nowadays a deeply felt issue, a phenomenon that urgently needs immediate solutions to reduce the large social, environmental and economic repercussions that derive from it. The “Safer Food System” project illustrated in this thesis aims to propose a possible contribution to the reduction of food waste in the final stages of the supply chain, as regards large-scale retail trade and consumers. The designed product-system makes use of the smart labels’ technology for food products, focusing on the new technology developed by the start-up “Safer Smart Lables”, which is able to significantly reduce food losses and waste realted to products of animal origin by monitoring in real time their degree of freshness. The application of these sensors has a double advantage: it would make it possible to significantly reduce food waste at the large-scale distribution level, by improving the management of products close to expiry date in store, but also the final consumer could be able to manage the products that are still edible inside their refrigerator in a more efficient and sustainable way, regardless of the current expiry date, relying on a much more truthful and reliable device. “Safer Food System” therefore proposes immediate and efficient method to include and integrate the sensor within the current organization of large-scale retail trade, up to the consumers’ homes, through the design of a product-system, with the final aim of reducing food waste in the most impactful stages of the supply chain.
Lo spreco alimentare è al giorno d’oggi una problematica molto sentita, un fenomeno che necessita con urgenza soluzioni immediate per ridurre le grosse ripercussioni sociali, ambientali ed economiche che ne derivano. Il progetto “Safer Food System”, illustrato in questa tesi, vuole proporre un possibile contributo alla riduzione dello spreco alimentare nelle fasi finali della filiera, in particolare per quanto riguarda la Grande Distribuzione Organizzata (GDO) e i consumatori. Il sistema-prodotto progettato si basa sulla tecnologia delle etichette smart per prodotti alimentari focalizzandosi su una nuova tipologia di sensore sviluppata dalla start-up “Safer Smart Labels”. Quest’ultima è in grado di ridurre in modo significativo le perdite alimentari legate ai prodotti origine animale monitorandone in tempo reale lo stato di freschezza. L’applicazione di tale tecnologia ha un doppio vantaggio: la GDO avrebbe la possibilità di ridurre significativamente gli sprechi di cibo, migliorando la gestione dei prodotti prossimi alla scadenza all’interno dei punti vendita, e il consumatore finale potrebbe gestire in modo più efficiente e sostenibile i prodotti ancora edibili all’interno del proprio frigorifero a prescindere dalla data di scadenza attuale, affidandosi a un device molto più veritiero e attendibile. “Safer Food System” propone dunque una modalità immediata ed efficiente di inserimento e di integrazione del sensore nell’attuale organizzazione della GDO, fino alle case dei consumatori, con l’obiettivo di ridurre lo spreco alimentare nelle fasi più impattanti della filiera.
