This dissertation has been developed during an internship of 5 months at the non profit association "Banco Alimentare della Lombardia - Danilo Fossati". This is the regional organisation of Lombardy of the national "Fondazione Banco Alimentare", which is the main Italian Food Bank tackling the problem of food waste. The project deals with the issues connected to the logistics structure of the organisation. This consists of recovering in its own warehouses the food surpluses still edible from food industry companies and distribute them to affiliated charitable organisations responsible for delivering them to people in need. Specifically, the focus is on the activities of one of the two warehouses owned by the association, the one located in Brescia. About it, objectives were defined at two levels: at short-term time horizon and long-term time horizon. The short-time horizon objective is the definitive assignment of the chosen charitable organisations to Brescia warehouse for the collection of their foodstuffs. This in order to solve the initial situation in which, due to the not adequate service level offered by Brescia warehouse, some charities collected their food from both the warehouses. The solution was devel- oped by using Business Process Modelling Notation (BPMN) to understand critical issues in warehouse operations and then calculating the changes in food volumes required to achieve the target. The long-term horizon objective is the extension of the service of- fered by Brescia warehouse to more charitable organisations. The solution was developed by performing the network analysis of both suppliers and customers using ArcGis Pro software, to understand the current situation and then to estimate and propose future expansion. Lastly, some consideration about the proposed solutions and some possible future options are suggested as a conclusion.
Questa tesi è stata sviluppata durante uno stage di 5 mesi presso l’associazione non profit "Banco Alimentare della Lombardia - Danilo Fossati". Questa è l’organizzazione della regione Lombardia della "Fondazione Banco Alimentare" nazionale, che è il principale Banco Alimentare italiano che affronta il problema dello spreco alimentare. Il progetto tratta le questioni legate alla struttura logistica dell’organizzazione, che consiste nel re- cuperare nei propri magazzini le eccedenze alimentari ancora commestibili provenienti dalle aziende dell’industria alimentare e distribuirle agli enti caritativi affiliati, incaricati di consegnarle alle persone bisognose. In particolare, l’attenzione è rivolta alle attività di uno dei due magazzini di proprietà dell’associazione, quello situato a Brescia. Sono stati quindi definiti obiettivi su due livelli: a breve termine e a lungo termine. L’obiettivo a breve termine è l’assegnazione definitiva delle strutture caritative scelte al magazzino di Brescia per la raccolta dei loro alimenti. Questo per risolvere la situazione iniziale in cui, a causa del livello di servizio non adeguato offerto dal magazzino di Brescia, alcune organizzazioni caritative ritiravano i loro alimenti da entrambi i magazzini. La soluzione è stata sviluppata attraverso la Business Process Modelling Notation (BPMN) per la com- prensione delle criticità nelle attività di magazzino e in seguito calcolando le variazioni nei volumi di alimenti necessarie per raggiungere l’obiettivo. L’obiettivo a lungo termine invece è l’estensione del servizio offerto dal magazzino di Brescia a un maggior numero di strutture caritative. La soluzione è stata sviluppata attraverso l’analisi della rete sia dei fornitori che dei clienti utilizzando il software ArcGis Pro, per comprendere la situazione attuale e quindi per stimare e proporre l’ampliamento futuro. Infine come conclusione, vengono suggerite alcune considerazioni sulle soluzioni proposte e alcune possibili opzioni future.
