How do different stages in the food supply chain approach sustainability? A systematic literature review study of practices and performance measurement

The paradigm of sustainability has been expanding through recent years with the rising challenges of escalating demand, excessive waste and resource scarcity due to the increased global consumption. In this context, the food industries grapple with not only responding to these pressing challenges but also aligning with global sustainability objectives. This dissertation explores the intricate intersection of sustainability with the food supply chain (FSC). Based on the Triple Bottom Line (TBL) framework, the analysis probes through the complexities faced by various actors across the FSC stages, namely Grower, Processor, Distributor, and Retailer, highlighting sustainability practices and performance measurements at each FSC stage, focusing on the environmental, social, and economic dimensions. The dissertation is centered on analyzing how sustainability performance is assessed in different stages of the FSC in order to identify the main commonalities and differences among the stages in terms of sustainable practices and then to develop a general Sustainable Performance Measurement (SPM) framework for the FSC based on the findings of the SLR and identify different sets of KPIs that correspond to the collected practices and facilitate their measurement in a harmonized and traceable way through the several correlations they have in common. Following a structured literature review methodology, a total of 210 papers have been analyzed to fully address the sustainability pillars of the FSC using a thorough analysis of the existing literature. The data analysis was performed based on three different levels. The first level was to analyze each paper individually according to the 12 quadrants identified in the research conceptual framework. The second level was to cross the papers according to each of the 4 stages of the FSC. Then the final level was to cross the findings of each FSC stage according to the three sustainability dimensions defined by the TBL of sustainability. Therefore, this study contributes to the current literature by setting clear boundaries between the indicators to be used in the different stages and proposes possible correlations that contribute to improved transparency and traceability across all stages of the FSC and capture the complex value of sustainability in an integrated system. Additional contribution is also presented by the presence of information about the measurement unit, data collection (source and responsibility), and frequency of measurement, increasing the framework’s practical implementation.

Il paradigma della sostenibilità si è ampliato negli ultimi anni con le crescenti sfide legate all'aumento della domanda, all'eccesso di rifiuti e alla scarsità di risorse dovute all'incremento del consumo globale. In questo contesto, le industrie alimentari si trovano a dover rispondere non solo a queste sfide pressanti, ma anche ad allinearsi agli obiettivi globali di sostenibilità. Questa tesi esplora l'intricata intersezione tra sostenibilità e filiera alimentare (FSC). Basandosi sul quadro di riferimento della Triple Bottom Line (TBL), l'analisi sonda le complessità affrontate dai vari attori nelle varie fasi della FSC, ovvero coltivatore, trasformatore, distributore e dettagliante, concentrandosi sulle dimensioni ambientale, sociale ed economica. La tesi è incentrata sull'analisi delle modalità di valutazione delle performance di sostenibilità nei diversi stadi dell'FSC, al fine di identificare i principali punti in comune e le differenze tra gli stadi in termini di pratiche sostenibili e di misurazione delle performance, per poi sviluppare un nuovo quadro Misurazione della Performance di Sostenibilità (SPM) per l'FSC basato sui risultati della letteratura, che identifica diversi set di KPI corrispondenti alle pratiche raccolte e ne facilita la misurazione in modo armonizzato e tracciabile attraverso le diverse correlazioni che hanno in comune. Seguendo una metodologia di revisione strutturata della letteratura (Structured Literature Review, SLR), sono stati analizzati un totale di 210 documenti per affrontare in modo completo i pilastri della sostenibilità dell'FSC, utilizzando un'analisi approfondita della letteratura esistente. L'analisi dei dati è stata condotta su tre diversi livelli. Il primo livello è stato quello di analizzare ogni articolo singolarmente in base ai 12 quadranti identificati nel quadro concettuale della ricerca. Il secondo livello è stato quello di incrociare i documenti in base a ciascuna delle 4 fasi della FSC. Il livello finale è stato quello di incrociare i risultati di ogni fase dell'FSC in base alle tre dimensioni della sostenibilità definite dalla TBL della sostenibilità. Pertanto, questo studio contribuisce alla letteratura attuale creando uno stato dell'arte delle pratiche di sostenibilità lungo le quattro fasi dell'FSC. Quindi, il quadro SPM introdotto stabilisce chiari confini tra gli indicatori da utilizzare nelle diverse fasi e propone possibili correlazioni che contribuiscono a migliorare la trasparenza e la tracciabilità in tutte le fasi dell'FSC per cogliere il valore complesso della sostenibilità in un sistema integrato. Un ulteriore contributo è dato dalla presenza di informazioni sull'unità di misura, sulla raccolta dei dati (fonte e responsabilità) e sulla frequenza di misurazione, che aumentano l'attuazione pratica del quadro.
