The significant environmental impact caused by food wastage at the household level needs to be addressed. This study aims to determine if artificial intelligence (AI) can be a useful tool in reducing food waste at the household level and if investing in the development of a solution can benefit stakeholders in the food industry. Additionally, it aims to identify the role of designers in this context. An extensive literature review was conducted to identify the primary household behaviors that lead to waste and the strategies implemented to counteract them. Among the most innovative tools, there is AI, with applications identified throughout the food industry supply chain, finding positive results mainly upstream. Literature suggests that the most effective way to significantly reduce food waste in the later stages of the supply chain is through cooperation among various stakeholders, with potential benefits also for retailers. A market analysis was then conducted to identify market gaps, benefits, and characteristics of a potential service provided by the latter. Finally, the study explored how the design framework of designers supported by AI could vary, resulting in developing new guidelines. Based on these premises, AI emerges as a tool to optimize household scheduling and meal planning, although current applications do not fully exploit its potential due to technological limitations and food product traceability issues. Retailers could benefit from offering AI-services to reduce household waste, increase customer loyalty, and improve order forecasting. However, this could also pose new challenges related to the customer experience. With the introduction of AI in the design process, designers will see pre-design data collection simplified and, subsequently, the automation of the iterative research process for product or service improvement, thanks to the “problem-solving loop.” Therefore, the designer's role will increasingly shift towards problem identification rather than solution creation. While this is a general statement for design with AI, in this specific case, it is essential to develop a service system that utilizes persuasive design theories for behavioral change to ensure prolonged adoption and use of the service.
Il forte impatto ambientale causato dal cibo buttato senza essere consumato a livello domestico necessita di essere contrastato. Questo studio si propone di determinare se l’intelligenza artificiale (IA) possa essere uno strumento utile per ridurre lo spreco di cibo a livello domestico, e se investire nello sviluppo di una soluzione possa portare benefici per gli attori dell’industria alimentare. Inoltre, si intende identificare il ruolo dei designer in questo contesto. È stata quindi condotta un’ampia revisione della letteratura per individuare i principali comportamenti domestici che generano spreco e gli strumenti messi in atto per contrastarli. Tra i più innovativi vi è IA, della quale sono state identificate le applicazioni lungo tutta la supply chain dell’industria alimentare, trovando riscontri positivi sull’utilità del tool principalmente a monte. In letteratura si sostiene che l’unico modo efficace per ridurre significativamente lo spreco di cibo nelle ultime fasi della supply chain è un approccio di cooperazione tra vari stakeholder, con potenziali benefici anche per i rivenditori. è stata quindi condotta una market analysis per individuare i gap di mercato, i benefici e le caratteristiche di un potenziale servizio fornito da quest’ultimi. Infine, è stato approfondito come possa variare il framework di progettazione dei designer, supportato dall’IA, con conseguente sviluppo di nuove linee guida. Basandosi su queste premesse, l’IA emerge come uno strumento per ottimizzare la programmazione domestica e la gestione dei pasti, anche se le attuali applicazioni non ne sfruttano appieno il potenziale a causa di limitazioni tecnologiche e di tracciabilità dei prodotti alimentari. I rivenditori potrebbero trarre vantaggio dall’offrire servizi potenziati dall’IA per ridurre lo spreco domestico, aumentando la fidelizzazione dei clienti e migliorando la previsione degli ordini. Tuttavia, ciò potrebbe anche generare nuove sfide legate all’esperienza del cliente. Con l’introduzione dell’IA nel processo di progettazione, i designer vedranno semplificata la raccolta dei dati pre-progettazione e, successivamente, l’automatizzazione del processo iterativo di ricerca per il miglioramento dei prodotti o servizi, grazie al “problem-solving loop”. Pertanto, il ruolo del designer si sposterà sempre più verso l’identificazione dei problemi anziché la creazione di soluzioni. Sebbene questa sia un’affermazione di carattere generale per la progettazione con IA, in questo caso specifico è essenziale sviluppare un sistema servizio che utilizzi teorie persuasive di design per il cambiamento comportamentale, al fine di garantire un’adozione e un utilizzo prolungato del servizio.
