The importance of food waste management has become one of the most pressing challenges in both the industrial and social contexts of today. With growing awareness of the environmental and economic impact of food waste, companies in the agri-food sector are adopting increasingly targeted strategies to reduce product surplus and optimize resources. Among these companies, Barilla stands out not only as an industry leader but also as a company at the forefront of implementing innovative business management models. For this reason, this study aims to thoroughly analyze the strategies adopted by Barilla for food waste management, placing them within the theoretical framework of the food waste hierarchy and the food surplus framework. The objective is to understand how different corporate practices fit into a structured waste reduction model, evaluating the effectiveness of the methodologies used and proposing further improvements based on the three fundamental levers identified in scientific literature: measurement, organization, and coordination. The study will conclude with the identification of some Key Performance Indicators (KPIs) useful for monitoring food waste management, along with innovative solutions to enhance the current system, making it even more effective and sustainable.
L’importanza della gestione dello spreco alimentare è diventata una delle sfide più rilevanti nel contesto industriale e sociale contemporaneo. Con la crescente consapevolezza a proposito dell’impatto ambientale ed economico dello spreco di cibo, le aziende del settore agroalimentare stanno adottando strategie sempre più mirate per ridurre l’eccedenza di prodotti e ottimizzare le risorse. Tra queste vi è sicuramente Barilla, che oltre a rappresentare uno dei leader del settore, è sempre stata un’azienda considerata all’avanguardia per quanto riguarda l’implementazione di modelli innovativi per la gestione del suo business. Per questo motivo questo studio si propone di analizzare in modo approfondito le strategie adottate da Barilla per la gestione dello spreco alimentare, collocandole nel quadro teorico della food waste hierarchy e del food surplus framework. L’obiettivo è comprendere come le diverse pratiche aziendali si inseriscano in un modello strutturato di riduzione dello spreco, valutando l’efficacia delle metodologie impiegate e proponendo ulteriori miglioramenti basati sulle tre leve fondamentali individuate nella letteratura scientifica: misurazione, organizzazione e coordinazione. Il lavoro si concluderà con l’identificazione di Key Performance Indicators (KPI) utili per monitorare la gestione dello spreco alimentare e con la proposta di soluzioni innovative per migliorare l’attuale sistema, rendendolo ancora più efficace e sostenibile.
