Italian micro and small sized enterprises in the food sector represent the most widespread business type, yet their purchasing processes remain underexplored in academic literature. Supply chain management in these businesses is complex, as SMEs are characterized by limited resources, a less formalized organizational structure, and long-term supplier relationships based on trust. This research examines the Purchasing and Supply Management (PSM) practices adopted by micro and small Italian manufacturing enterprises, with a specific focus on artisanal businesses. On one hand, it analyses the critical factors influencing procurement strategies, competitive dynamics, and operational challenges; on the other, it explores competitive advantages and optimal strategies, addressing some of the gaps in existing literature, which has traditionally focused on large enterprises. Using a mixed-method approach that combines descriptive and interpretive analysis, this study investigates how SMEs balance their challenges and strengths. The objective is not to develop generalized theories but rather to understand individual cases, identifying key elements, their interconnections, and effective procurement strategies without compromising the unique identity of each business. The findings highlight how the specific operational context is crucial for artisanal enterprises. Stable and trust-based relationships with suppliers emerge as a long-term strategy, while certifications prove to be effective differentiation tools. Finally, balancing operational flexibility with process formalization is essential: the ability to monitor performance and integrate more structured purchasing strategies is a key factor for long-term competitiveness and growth, while preserving the agility that defines small businesses.
Le micro e piccole imprese del settore alimentare italiano rappresentano la tipologia aziendale più diffusa, ma i loro processi di acquisto rimangono poco approfonditi nella letteratura accademica. La gestione della supply chain in queste realtà è complessa: le PMI si distinguono per risorse limitate, un'organizzazione poco formalizzata e relazioni di lungo termine con i fornitori, fondate sulla fiducia. Questa ricerca analizza le pratiche di Purchasing and Supply Management (PSM) adottate dalle micro e piccole imprese manifatturiere italiane, con un focus sulle aziende artigiane. Da un lato, vengono esaminati i fattori critici che influenzano le strategie di approvvigionamento, le dinamiche competitive e le difficoltà operative; dall’altro, si indagano i vantaggi competitivi e le strategie ottimali, colmando alcune lacune della letteratura esistente, tradizionalmente orientata verso le grandi imprese. Attraverso un approccio metodologico misto, che combina analisi descrittiva e interpretativa, lo studio esplora come le PMI bilancino le proprie sfide e valorizzino i propri punti di forza. L'obiettivo non è elaborare teorie generali, ma comprendere il singolo caso e individuare elementi chiave, legami tra essi e strategie efficaci per la gestione degli acquisti, senza compromettere l'identità dell'impresa. I risultati evidenziano come il contesto specifico in cui operano sia determinante per le imprese artigiane. Le relazioni stabili e basate sulla fiducia con i fornitori emergono come una strategia di lungo termine, mentre le certificazioni si rivelano strumenti di differenziazione. Infine, il bilanciamento tra flessibilità operativa e formalizzazione dei processi risulta cruciale: la capacità di monitorare le performance e integrare strategie di acquisto più strutturate rappresenta un fattore determinante per la competitività e la crescita nel lungo periodo, senza rinunciare alla tipica agilità del piccolo business.
