E-grocery has shown a rapid growth in recent years, especially during the years of the COVID-19 pandemic. The rise in e-grocery sales, coupled with the distinctive characteristics of this sector, has generated considerable interest in the subject. At the same time, environmental sustainability has become increasingly important, both for consumers and companies, who are called upon to take responsibility and implement measures to reduce the environmental impact of their operations. In this context, understanding the environmental impact of e-grocery, particularly from the perspective of retailers, represents a fundamental starting point. To address these needs, this research develops an analytical model to estimate the environmental impact of e-grocery, analysing different configurations of the distribution network and the main order fulfilment alternatives reported in the literature. The model provides a comprehensive view of the entire order fulfilment process, modelling picking operations and different delivery options, including Home Delivery, Click and Collect option and delivery through Parcel Lockers. The model has been applied to a case study of a grocery retailer active in the Italian context. The results show that scenarios involving Home Delivery (HD) consistently exhibit the lowest carbon footprint (expressed in kg CO₂eq per order), with the D-HD configuration (picking in Darkstore with Home Delivery) emerging as the most sustainable option. In contrast, scenarios involving Click & Collect (C&C) or Click & Locker (C&L) options show a significant increase in emissions, especially assuming that the customer is reaching the collection point by car. The sensitivity analyses conducted, however, highlight that the results are influenced by the choice of certain key parameters, including the network configuration, the delivery density, vehicle types used and order composition.
Il settore dell'e-grocery ha registrato una rapida crescita negli ultimi anni, in particolare durante la pandemia da COVID-19. L'aumento delle vendite di generi alimentari online, insieme alle caratteristiche distintive di questo settore, ha suscitato un notevole interesse sull'argomento. Allo stesso tempo, la sostenibilità ambientale è diventata sempre più importante, sia per i consumatori che per le aziende, chiamate ad assumersi la responsabilità e ad attuare misure volte a ridurre l'impatto ambientale delle loro attività. In questo contesto, comprendere l'impatto ambientale dell'e-grocery, in particolare dal punto di vista degli operatori del settore, rappresenta un punto di partenza fondamentale. Per rispondere a queste esigenze, la presente ricerca sviluppa un modello analitico per stimare l'impatto ambientale dell'e-grocery, analizzando diverse configurazioni della rete di distribuzione e le principali alternative di evasione degli ordini riportate in letteratura. Il modello fornisce una visione completa dell'intero processo di evasione degli ordini, modellizzando le operazioni di prelievo e le diverse opzioni di consegna, tra cui la consegna a domicilio, l'opzione Click and Collect e la consegna tramite Parcel Lockers. Il modello è stato applicato a un caso studio relativo a un operatore attivo nel contesto italiano. I risultati mostrano che gli scenari che prevedono la consegna a domicilio (HD) presentano costantemente le emissioni per ordine (espresse in kg CO₂eq per ordine) più basse, con la configurazione D-HD (prelievo in Darkstore con consegna a domicilio) che emerge come l'opzione più sostenibile. Al contrario, gli scenari che prevedono le opzioni Click & Collect (C&C) o Click & Locker (C&L) mostrano un aumento significativo delle emissioni, soprattutto se si ipotizza che il cliente raggiunga il punto di ritiro in auto. Le analisi di sensibilità condotte, tuttavia, evidenziano come i risultati siano influenzati dalla scelta di alcuni parametri chiave, tra cui la configurazione della rete, la densità delle consegne, i tipi di veicoli utilizzati e la composizione dell’ordine.
