Designing and managing production systems and maintaining their efficiency over time to meet the market’s ever-evolving demands, is a demanding task. The challenge becomes structural and even greater when the production system is continuously expanding and evolving and is close to reaching full production capacity. In this context, competitiveness is no longer determined only by installed assets, but by the ability to govern variability and distributed inefficiencies on processes. It is increasingly evident that risk engineering can provide substantial support to the design, operation, maintenance and upgrading of production systems, helping to safeguard profitability and ensure continuous improvement in efficiency. The objective of this study is to analyse and quantify the risks associated to production interruptions in the packaging plant for legumes and cereals at packaging plant of B.F. Agro-Industriale, with the aim of optimising the quantity of packaged products. The analysis is carried out through the HoRAM (Holistic Risk Analysis and Modelling) methodology, enabling the transformation of operational knowledge and empirical data into lodic-stochastic simulation architecture, which also takes into account human, technological and organizational factors. The ultimate goal is to obtain a predictive model of the packaging lines that enables the identification of risk levels and criticalities associated with machine downtimes and individual line components, as well as to assess the effectiveness of potential mitigation strategies aimed at optimising the quantity of finished packaged products. The study and analyses conducted on this specific case were made possible thanks to the documentation provided by the company itself, along with additional analyses and on-site research activities.
Progettare e gestire sistemi di produzione e mantenerli efficienti nel tempo per soddisfare le continue nuove richieste del mercato, è un compito impegnativo. Il problema diventa strutturale e ancora più sfidante quando il sistema produttivo è in continua crescita ed evoluzione e prossimo alla completa saturazione produttiva. In questo contesto, la competitività non è più solamente determinata dalle risorse già in uso, ma dalla capacità di governare la variabilità e le inefficienze distribuite lungo i processi. È sempre più evidente come l’ingegneria del rischio possa apportare un grande sostegno alla progettazione, al funzionamento, alla manutenzione e al miglioramento dei sistemi di produzione per salvaguardarne la redditività e garantirne una continua crescita in termini di efficienza. L’obiettivo di questo studio è quello di analizzare e quantificare i rischi associati alle interruzioni di produzione dell’impianto di confezionamento di legumi e cereali nello stabilimento di B.F. Agroindustriale, con l’obiettivo di ottimizzare la quantità dei prodotti confezionati. L’analisi, svolta in conformità alla metodologia HoRAM (Holistic Risk Analysis and Modelling), ha consentito di trasformare dati e conoscenze empiriche in un’architettura di simulazione logico-stocastica, che tiene in considerazione anche il fattore umano, tecnologico e organizzativo. L'obiettivo ultimo è quello di ottenere un modello previsionale delle linee di confezionamento che consenta di identificare il livello di rischio e le criticità associate ai fermi macchina e ad ogni componente sulle linee, nonché verificare l'efficacia di alcune possibili soluzioni mitigative volte ad ottimizzare la quantità di prodotto finito confezionato. Lo studio e le analisi svolte su questo caso specifico, sono state rese possibili grazie alla documentazione fornita dall’azienda stessa e da ulteriori analisi e ricerche svolte in loco.
