Since ancient times, most of the civilizations and cultures that have developed and succeeded one another over centuries have always produced different types of sweets that have become part of their culinary traditions – but one of these foods has always been present in our pantries, regardless of its variety of recipes and shapes: the biscuit. With the advent of industrialization in the food sector, including in the confectionery category, during the 19th century, some small family businesses took the opportunity to grow and expand, such as the Gentilini company. Founded in Rome in 1890, originally as a pastry shop, it has now become one of the most important and long-standing Italian biscuit companies, and still has its own factory headed at the time of this study by Paolo Gentilini, the direct descendant of the company's founder, Pietro Gentilini, his grandfather. In addition to baking various varieties of biscuits, throughout its history, the Gentilini company has also pioneered in the production of packaging and advertising, becoming a central presence in the city of Rome, with its main communication strategy being its connection to transportation and the historic architecture of the Eternal City. In regards to the history of this family business, I decided to develop my thesis project, which, after in-depth research and analysis, starting from Gentilini's historical archive and arriving at case studies on other biscuits productions, consisted of developing a proposal for a new biscuit for the aforementioned company, which can become part of their vast product catalog, without, however, alienating itself from their brand, but rather strongly linking itself to it, taking inspiration directly from Gentilini’s long history and its proud local relationship with the capital of Italy.

Sin dall’antichità, una buona parte delle civiltà e culture che si sono sviluppate e succedute nel corso del tempo ha sempre prodotto differenti tipologie di dolci che sono entrate a far parte delle loro tradizioni culinarie – ma uno di questi alimenti è sempre stato presente nelle nostre dispense, indipendentemente dalle sue varietà di ricette e forme: il biscotto. Con l’avvento dell’industrializzazione nel settore alimentare, compreso quello dolciario, durante il XIX secolo, alcune piccole imprese familiari colsero l’occasione per crescere ed espandersi, tra cui la ditta Gentilini. Fondata a Roma nel 1890 originariamente come pasticceria, oggi è diventata una delle aziende italiane più importanti e longeve nella produzione di biscotti, e ha tuttora una propria fabbrica con a capo - al momento dello svolgimento di questo studio - Paolo Gentilini, il discendente diretto del fondatore dell’impresa Pietro Gentilini, suo nonno. Oltre ad aver sfornato diverse varietà di biscotti, nel corso della sua storia, la ditta Gentilini è stata pioniera anche nella produzione di packaging e pubblicità, diventando una presenza centrale nella città di Roma, avendo come principale strategia di comunicazione il legame con i trasporti e le architetture storiche della Città Eterna. Sulla storia di questa impresa familiare ho deciso di sviluppare il mio progetto di tesi, che, dopo un’approfondita ricerca e analisi, a partire dall’archivio storico della Gentilini per arrivare a casi di studio su altre produzioni di biscotti, è consistito nello sviluppo di una proposta di un nuovo biscotto per l’azienda in questione, che possa entrare a far parte del loro vasto catalogo di prodotti, senza però alienarsi dal loro marchio, bensì legandosi fortemente ad esso, prendendo spunto direttamente dalla sua lunga storia e dal suo fiero rapporto a livello locale con la capitale d’Italia.
