Immersive technologies such as virtual reality, augmented reality, mixed reality, extended reality, and metaverse environments are increasingly used in tourism, museums, cultural heritage, destination marketing, and food-related experiences. However, many immersive tourism experiences still focus mainly on visual and auditory information, while real tourism is experienced through multiple senses. This thesis examines multisensory immersive experiences in tourism through a structured literature review of recent peer-reviewed studies. The review focuses on four sensory categories: olfactory experiences, gustatory experiences, touch-based experiences, and multisensory integration. The aim is to synthesize current research, identify the main knowledge gaps, and suggest future research directions for multisensory immersive tourism. The findings show that smell, taste, touch, and multisensory combinations can support realism, presence, emotion, imagination, memory, learning, accessibility, and destination-related responses. However, these effects are not automatic. Sensory cues need to be congruent, recognizable, balanced, authentic, and connected to the tourism context. The review also shows that much of the evidence is based on short-term experiments, laboratory settings, small samples, or prototype systems. More tourism-specific, field-based, longitudinal, inclusive, and practical research is needed. This thesis contributes by bringing together fragmented research on multisensory immersive tourism and by developing a future research agenda. It argues that the next step is not simply to add more senses to digital environments, but to understand when, why, and how sensory cues create value for tourists.

Le tecnologie immersive, come la realtà virtuale, la realtà aumentata, la realtà mista, la realtà estesa e gli ambienti basati sul metaverso, sono sempre più utilizzate nel turismo, nei musei, nel patrimonio culturale, nel marketing delle destinazioni e nelle esperienze legate al cibo. Tuttavia, molte esperienze turistiche immersive si concentrano ancora principalmente su informazioni visive e uditive, mentre il turismo reale viene vissuto attraverso più sensi. Questa tesi esamina le esperienze immersive multisensoriali nel turismo attraverso una revisione strutturata della letteratura recente sottoposta a peer review. La revisione si concentra su quattro categorie sensoriali: esperienze olfattive, esperienze gustative, esperienze basate sul tatto e integrazione multisensoriale. L’obiettivo è sintetizzare la ricerca esistente, identificare le principali lacune conoscitive e proporre direzioni future di ricerca per il turismo immersivo multisensoriale. I risultati mostrano che odore, gusto, tatto e combinazioni multisensoriali possono supportare realismo, presenza, emozione, immaginazione, memoria, apprendimento, accessibilità e risposte legate alla destinazione. Tuttavia, questi effetti non sono automatici. Gli stimoli sensoriali devono essere congruenti, riconoscibili, bilanciati, autentici e collegati al contesto turistico.
